Vegan Potato and Tofu Scramble Burrito

Hi there, I come back with another lunch recipe to share with you guys! Lately, I’ve been busy trying something new in my life, so I prefer making a lunch dish without spending much time on it.

Even though I want it to be simple and quick, but I also want it to be savoury. So, I combined the words “simple” as in simple ingredients that are probably already sitting in your pantry and fridge, “quick” that it takes less than 20 minutes and “savoury” dish that’s full of flavour and spices.

This Vegan Potato and Tofu Scramble Burrito is packed with veggies, protein, and a good amount of carb that can keep you full for longer. Also, this savoury dish recipe is very healthy and makes a perfect lunch for a quick lunch break.

Ready to dive in?

Vegetable: There is a huge range of vegetables you can add to the burrito as your base: red or green leaf lettuce, carrots, bell peppers, kale, spinach, and collard greens. Feel free to use any vegetables you want.

Extra topping: You may add any other topping for extra crunchiness here such as seeds, and nuts. Keep it minimal for a healthy burrito.

Ingredients:

Tofu scramble:

  • 360g extra firm tofu
  • 2 tablespoons nutritional yeast
  • ½ teaspoon turmeric
  • ½ teaspoon garlic powder
  • Salt and pepper

Stir-fried potato:

  • 1 medium potato, chopped
  • 1 medium onion, diced
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • Salt and pepper

Other additions:

  • 1 large tortilla
  • Lettuce
  • Cooking oil

Instructions:

  1. In a frying pan over medium heat, add some oil and when it’s hot enough, sauté onion till softened.
  2. Add potato, all the spices for stir-fried potato and cook till softened. It takes about 5-10 minutes. Once cooked, transfer it into a bowl and set it aside.
  3. In a bowl, crumble tofu into bite-sized pieces using your hand or a fork. And in another small bowl, mix spices for tofu scramble.
  4. In the same frying pan over medium heat, cook tofu and all the spices for tofu scramble for 5 to 10 minutes till well combined. Stir occasionally.
  5. Assemble burrito by layering out the tortilla, add the lettuce on the bottom, then add stir-fried potato, and tofu scramble on top. Use your desired dressing to drizzle over. Fold the edges over and pull the bottom layer over the filling, gently pressing down. Roll upwards all the way. You may heat the burrito if you want or just serve immediately.
