A Savoury Meal without Putting on Weight – Pineapple Konjac Fried Rice (Vegan)

So, you know we’re talking about Pineapple Konjac Fried Rice in this recipe. You might already hear about it. There are various versions of Pineapple Fried rice around the world. Whether it is Chinese, Malay, Vietnamese, Hawaiian or else. But the most well-known and authentic Pineapple Fried Rice is of Thai origin.

This tangy, sweet, and sour taste of the fresh pineapple is very appetizing and without realizing it, you might be getting a second plate of it. The combination of fresh pineapple and spices is just amazing, and it gives a refreshing taste than regular fried rice.

Konjac rice a.k.a Shirataki rice: This type of rice was made from real konjac, a starchy root vegetable grown in various parts of Asia. It contains very low to zero carbs, calories and absolutely no fat. Apart from being low in calories, this rice is also soy-free and gluten-free. Konjac rice was primarily made of soluble fibre that helps you stay full for longer.

Diet-friendly: I reduced the amount of cooked rice and swap to konjac rice for people who are trying to control their carb intake and still able to eat a delicious meal at the same time. You may replace whole cooked rice with konjac rice, but it might not taste the same because konjac rice tends to retain more water and regular cooked rice works well with seasoning.

Ingredients:

  • 1 medium onion, sliced
  • ½ cup fresh pineapple, cubed
  • 1 cup carrot, cubed
  • ½ cup cooked rice (preferable leftover cooked rice)
  • 1 cup konjac rice
  • Vegetable oil
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar
  • 2 teaspoons curry powder
  • ½ teaspoon turmeric
  • A pinch of salt

For Serving (Optional):

  • Bell pepper
  • Frozen green peas
  • Frozen corn
  • Roasted nuts – cashew, peanut
  • Raisins

Instructions:

  1. Place a large frying pan over medium heat and add 2 teaspoons oil. Cook sliced onion, cubed carrots, and other vegetables (if using) till soften.
  2. Stir in cooked rice and konjac rice. Toss to mix.
  3. Add soy sauce, sugar, curry powder, turmeric and salt till the seasoning is well mixed.
  4. Stir in pineapple cubes, nuts, and raisins (if using) and cook till pineapple slightly turned to darken.
  5. Serve immediately.
